  • For Marinating the Chicken:
  • 500 gram bone-in chicken pieces (preferably thigh or leg)
  • 1/2 cupplain yogurt
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt totaste
  • For the Rice:
  • 2 cupslong-grain Basmati rice
  • 4 cups water
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1 inch cinnamon stick
  • 1 bay leaf
  • 1 star anise
  • 1 tsp cumin seeds
  • 2 tbsp cooking oil or ghee
  • For the Pulao:
  • 1 large onion, thinly sliced
  • 2 green chilies, slit lengthwise (adjust to your spice preference)
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 cupmixed vegetables (carrots, peas, beans)
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt totaste

  • Marinating the Chicken:
