Ingredients
  

  • 2 medium zucchini About 400 grams.
  • 1 cup breadcrumbs 120 grams.
  • 1/2 cup grated Parmesan cheese 50 grams.
  • 2 cloves garlic Minced.
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil For brushing or spray.

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  • Wash and trim the zucchini, then grate using a grater or food processor until you have about 2 cups of grated zucchini.
  • Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture to prevent soggy bites.
  • In a mixing bowl, combine the drained zucchini, breadcrumbs, grated Parmesan cheese, minced garlic, egg, dried oregano, salt, and black pepper. Mix until well combined.
  • Using your hands or a spoon, form small bite-sized patties or balls from the mixture and place them on the prepared baking sheet.
  • Spray the tops lightly with olive oil or use a brush to coat them with olive oil for an extra crunch.
  • Bake in the preheated oven for 20 minutes or until the bites are golden brown and crispy, flipping them halfway through for even cooking.
  • Remove from the oven and let cool for a few minutes before serving.
  • Feel free to serve with a dipping sauce like marinara or garlic aioli for added flavor.
