Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 pound ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup canned black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped lettuce
  • ½ cup sour cream
  • ½ cup salsa
  • ¼ cup sliced jalapeños (optional)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions
 

  • In a pot, combine 1 cup of rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 15-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork once done.
  • While the rice is cooking, heat a large skillet over medium heat and add a splash of olive oil.
  • Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  • Drain excess fat from the beef if necessary, then add the taco seasoning to the beef. Follow the packet instructions, usually adding a bit of water to create a sauce.
  • Stir in the black beans, corn, and diced tomatoes to the beef mixture. Cook for an additional 3-5 minutes until heated through.
  • Once the rice is ready, mix it into the meat and vegetable mixture in the skillet. Stir until everything is well combined and heated through.
  • To serve, layer the Taco Rice onto individual plates or bowls. Top with shredded cheddar cheese, chopped lettuce, sour cream, salsa, and jalapeños if using.
