In a pot, combine 1 cup of rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 15-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork once done.
While the rice is cooking, heat a large skillet over medium heat and add a splash of olive oil.
Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
Drain excess fat from the beef if necessary, then add the taco seasoning to the beef. Follow the packet instructions, usually adding a bit of water to create a sauce.
Stir in the black beans, corn, and diced tomatoes to the beef mixture. Cook for an additional 3-5 minutes until heated through.
Once the rice is ready, mix it into the meat and vegetable mixture in the skillet. Stir until everything is well combined and heated through.
To serve, layer the Taco Rice onto individual plates or bowls. Top with shredded cheddar cheese, chopped lettuce, sour cream, salsa, and jalapeños if using.
