Ingredients
  

  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cups frozen mixed vegetables Includes peas, carrots, corn.
  • 1 can cream of mushroom soup 10.5 oz can.
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 package frozen tater tots 32 oz package.
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain any excess fat.
  • Add the frozen mixed vegetables, cream of mushroom soup, sour cream, garlic powder, salt, and black pepper to the skillet. Stir until well combined and heated through.
  • Spread the beef mixture evenly in the bottom of a 9x13 inch baking dish.
  • Layer the frozen tater tots on top of the beef mixture, covering it completely.
  • Bake in the preheated oven for 30 minutes.
  • Remove the casserole from the oven and sprinkle shredded cheddar cheese on top.
  • Return the casserole to the oven and bake for an additional 10-15 minutes until the cheese is melted and the tater tots are golden brown.
  • Allow to cool for a few minutes before serving.

Notes

You can customize this casserole by adding different vegetables or spices according to your taste.
This dish can be made ahead of time and stored in the refrigerator before baking. Simply increase the baking time if cooking from chilled.
