- 1 cup water
- 1 cup sugar
- 1/2 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon chili flakes Adjust according to heat preference.
- 2 tablespoons cornstarch
- 2 tablespoons cold water For slurry.
- 2 cloves garlic, minced
- 1 teaspoon salt
In a small saucepan, combine water, sugar, rice vinegar, soy sauce, chili flakes, minced garlic, and salt. Stir the mixture over medium heat until the sugar dissolves and everything is well combined.
In a separate bowl, mix cornstarch and cold water to create a slurry. Make sure there are no lumps.
Bring the sauce mixture to a gentle boil while stirring constantly.
Once boiling, add the cornstarch slurry to the saucepan.
Reduce the heat to low and keep stirring until the sauce thickens, which should take about 2-3 minutes.
Remove from heat and let cool before transferring to a glass jar or bottle.
Store in the refrigerator for up to two weeks.

For a thicker sauce, add a bit more cornstarch via the slurry method, but do so gradually.
