Ingredients
  

  • 1 pound smoked sausage, sliced into rounds Approximately 450g.
  • 4 medium-sized potatoes, diced Approximately 800g.
  • 1 medium onion, chopped Approximately 150g.
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley, chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onions and cook until they become translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Add the sliced smoked sausage to the skillet and cook for about 5-7 minutes until they are browned.
  • Add the diced potatoes to the skillet and sprinkle the paprika, thyme, salt, and pepper over the mixture.
  • Stir well to combine all the ingredients. Cover the skillet with a lid and allow the potatoes to cook for about 15-20 minutes, stirring occasionally, until they are tender.
  • Once the potatoes are cooked, remove the lid and let it cook for an extra 2-3 minutes to ensure everything is heated through and slightly crispy.
  • Remove from heat and garnish with fresh parsley before serving.

Notes

Feel free to add other vegetables like bell peppers or carrots for extra flavor and nutrition.
Ensure the potatoes are cut into uniform sizes for even cooking.
