- 2 lbs beef chuck, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 1/2 cup unsalted butter, melted
- 6 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped Plus more for garnish.
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon thyme (dry or fresh)
In a large mixing bowl, combine the beef chuck pieces with salt, pepper, paprika, onion powder, thyme, and half of the minced garlic. Toss to coat the beef evenly with the seasonings.
Place the halved baby potatoes at the bottom of the slow cooker. Add the seasoned beef on top of the potatoes.
In a separate bowl, combine the melted butter, remaining minced garlic, and chopped parsley. Pour this mixture over the beef and potatoes in the slow cooker.
Cover the slow cooker with its lid. Set it to low and cook for 6 hours or until the beef is tender and the potatoes are fork-tender.
Once cooked, gently stir the beef and potatoes to coat them in the garlic butter sauce. Garnish with additional fresh parsley before serving.
For an extra kick, you can add red pepper flakes to the seasoning mix.
Feel free to substitute the potatoes with other root vegetables like carrots or turnips.
