- 1 pound ground beef (or ground turkey) Can substitute with cooked shredded chicken or a meat substitute.
- 1 small onion, diced
- 1 cup frozen mixed vegetables (peas, corn, and carrots)
- 1 can cream of mushroom soup (10.5 oz)
- 1 cup shredded cheddar cheese
- 1 package frozen tater tots (32 oz)
- to taste salt
- to taste pepper
- 1 teaspoon garlic powder Optional.
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef and diced onion until the meat is fully cooked, about 5-7 minutes. Drain any excess fat.
Stir in the frozen mixed vegetables, cream of mushroom soup, and garlic powder (if using). Cook for an additional 2-3 minutes until everything is heated through. Season with salt and pepper to taste.
Spread the meat and vegetable mixture evenly in the bottom of a greased 9x13 inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the meat mixture.
Arrange the frozen tater tots in a single layer on top of the cheese.
Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
Remove from the oven and let sit for 5 minutes before serving.
Feel free to substitute the ground meat with cooked shredded chicken or a meat substitute for a vegetarian version.
For added flavor, try seasoning with Italian herbs or hot sauce.
This casserole is great for leftovers and can be reheated in the microwave or oven.
