Ingredients
  

  • 1 pound Italian sausage, uncooked Approximately 4 large sausages.
  • 1 unit bell pepper, sliced Any color.
  • 1 medium onion, sliced
  • 2 medium zucchinis, sliced
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs Or mixed herbs.
  • to taste unit salt
  • to taste unit pepper
  • optional unit fresh parsley For garnish.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • On a large sheet pan, drizzle 2 tablespoons of olive oil.
  • Add the sliced bell pepper, onion, zucchinis, and cherry tomatoes to the sheet pan. Toss the vegetables in the oil until they are well coated.
  • Place the sausages on the sheet pan among the vegetables.
  • Sprinkle garlic powder, dried Italian herbs, salt, and pepper over the sausages and vegetables.
  • Use a spatula to toss the vegetables gently, ensuring that everything is evenly seasoned.
  • Arrange the sausages and vegetables in a single layer on the sheet pan.
  • Bake in the preheated oven for 25-30 minutes, or until the sausages are browned and cooked through and the vegetables are tender.
  • Remove the sheet pan from the oven and let it rest for a few minutes.
  • If desired, garnish with fresh parsley before serving. Enjoy your meal!

Notes

You can substitute the sausages with chicken sausage or bratwurst based on your preference.
Feel free to mix and match vegetables with what's in season or what you have on hand, such as carrots, potatoes, or green beans.
