Activate the yeast by mixing warm water, sugar, and active dry yeast in a small bowl. Let it sit for about 5-10 minutes until frothy.
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
Mix until a dough forms. If the dough is sticky, add more flour, a tablespoon at a time.
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
Grease the sheet pan with olive oil and place the dough in the center. Gently stretch the dough to fit the size of the pan. Cover and let it rise in a warm place for about 15 minutes.
Preheat the oven to 450°F (232°C).
Once the dough has risen, press dimples into the surface with your fingers.
Spread pizza sauce evenly over the dough, then sprinkle shredded mozzarella cheese on top.
Add your choice of toppings, including pepperoni or any optional veggies.
Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly with a golden brown crust.
Remove from the oven, let cool for a few minutes, then slice into squares and serve.
