Ingredients
  

  • 1 pound Italian sausage Or your choice of sausage.
  • 2 cups bell peppers, sliced About 2-3 medium peppers.
  • 1 cup red onion, sliced About 1 medium onion.
  • 2 cups baby potatoes, halved About 1 pound.
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • fresh parsley For garnish (optional).

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper for easier cleanup (optional).
  • In a mixing bowl, combine the bell peppers, red onion, and baby potatoes. Drizzle with the olive oil, garlic powder, Italian seasoning, salt, and pepper. Toss to coat the vegetables evenly.
  • Arrange the seasoned vegetables on one side of the baking sheet.
  • Place the sausages on the other side of the baking sheet, leaving space between them and the vegetables.
  • Bake in the preheated oven for 25-30 minutes or until the sausages are cooked through and the vegetables are tender and slightly caramelized, stirring halfway through for even cooking.
  • Once done, remove from the oven and let it cool for a couple of minutes. Garnish with fresh parsley if desired.
  • Serve hot and enjoy your easy sheet pan sausage dinner!

Notes

Feel free to customize the vegetables based on your preference or what you have available. Zucchini, carrots, and broccoli would also work well.
To add a bit of heat, consider using spicy sausage or adding crushed red pepper flakes to the vegetable mix.
Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave before serving.
