Ingredients
  

  • 1 pound Italian sausage sweet or spicy
  • 1 medium bell pepper diced
  • 1 medium zucchini diced
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • optional fresh basil for garnish

Instructions
 

  • In a large skillet, heat the olive oil over medium heat.
  • Remove the sausage from its casings and add it to the skillet. Cook for about 5-7 minutes, breaking it up with a spatula until browned and cooked through.
  • Add the diced onion, bell pepper, and zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are softened.
  • Stir in the minced garlic and cherry tomatoes, cooking for another 2-3 minutes until the tomatoes are just warmed through.
  • Sprinkle the Italian seasoning over the mixture and season with salt and pepper to taste. Stir well to combine.
  • Remove from heat and let it sit for a couple of minutes before serving. Garnish with fresh basil if desired.

Notes
