In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.
Add the olive oil, salt, and flour to the yeast mixture. Mix until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
Place the dough into a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 30 minutes or until doubled in size.
Preheat the oven to 375°F (190°C).
Once the dough has risen, punch it down and roll it out into a rectangle (about 12x8 inches) on a floured surface.
Sprinkle the crumbled sausage and shredded cheddar cheese evenly over the rolled-out dough.
Starting from one end, carefully roll the dough up tightly, sealing the edges as you go.
Place the rolled dough seam-side down on a parchment-lined baking sheet.
Bake in the preheated oven for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped.
Remove from the oven and let it cool for a few minutes before slicing.
Optionally, garnish with fresh parsley before serving.
