Ingredients
  

  • 12 oz cheese tortellini
  • 6 oz salami, diced
  • 8 oz fresh mozzarella balls, halved
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • fresh basil leaves for garnish (optional)

Instructions
 

  • Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually about 5-7 minutes, until al dente.
  • Once cooked, drain the tortellini in a colander and rinse under cold water to stop the cooking process. Set aside to cool.
  • In a large mixing bowl, combine the diced salami, mozzarella balls, cherry tomatoes, and black olives.
  • In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  • Add the cooled tortellini to the mixing bowl with the other ingredients. Pour the dressing over the top and toss gently until everything is well combined.
  • Taste and adjust seasoning if needed. Garnish with fresh basil leaves if desired.
  • Serve immediately or refrigerate for 30 minutes for the flavors to meld before serving.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
Feel free to customize the salad by adding other ingredients such as bell peppers, cucumbers, or spinach based on your preference.
For a lighter option, you can use turkey salami.
