Ingredients
  

  • 8 ounces rotini pasta
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn fresh or frozen
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 cup shredded cheddar cheese
  • Fresh cilantro for garnish optional

Instructions
 

  • Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and set aside.
  • While the pasta is cooking, heat the olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic to the skillet and sauté for an additional 1 minute until fragrant.
  • Stir in the can of Rotel diced tomatoes (with juice), black beans, corn, cumin, chili powder, salt, and pepper. Cook for about 5-7 minutes until heated through.
  • Add the cooked rotini pasta to the skillet and gently toss to combine all the ingredients. Heat everything together for another 2-3 minutes.
  • Remove the skillet from the heat and sprinkle the shredded cheddar cheese over the pasta. Cover for a minute to let the cheese melt slightly.
  • Serve the Rotel Pasta Fiesta warm, garnished with fresh cilantro if desired.

Notes

For added protein, consider adding cooked chicken or ground turkey.
This dish can be made ahead of time and reheated, making it great for meal prep.
Adjust the heat level by choosing mild or spicy Rotel tomatoes based on your preference.
