- 2 large sweet potatoes About 1.5 pounds.
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/4 cup honey
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley Optional.
Preheat your oven to 400°F (200°C).
Wash and peel the sweet potatoes, then slice them into 1/2-inch thick rounds.
In a mixing bowl, combine the olive oil, salt, black pepper, and paprika. Add the sweet potato rounds and toss until they are evenly coated.
Line a baking sheet with parchment paper if desired, then arrange the sweet potato rounds in a single layer on the sheet.
Roast the sweet potatoes in the preheated oven for about 25 minutes, turning halfway through, until they are tender and slightly caramelized.
Once the sweet potatoes are done, remove them from the oven and drizzle with honey while they are still warm.
Sprinkle crumbled feta cheese over the top of the sweet potatoes and garnish with chopped parsley if using.
Serve warm as a delicious side dish.
For a spicier kick, consider adding a pinch of cayenne pepper to the olive oil mixture.
