Ingredients
  

  • 2 cups cooked rice about 400 grams
  • 1 tablespoon vegetable oil 15 ml
  • 1 cup mixed vegetables carrots, peas, bell peppers (150 grams)
  • 1 small onion, diced 100 grams
  • 2 cloves garlic, minced
  • 2 large eggs optional
  • 3 tablespoons soy sauce 45 ml
  • 1 tablespoon sesame oil 15 ml
  • to taste salt
  • to taste pepper
  • as needed green onions, chopped for garnish

Instructions
 

  • Heat the vegetable oil in a wok or large skillet over medium-high heat.
  • Add the diced onion and minced garlic, sauté for about 2 minutes until the onion becomes translucent.
  • Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender.
  • If using eggs, push the vegetables to one side of the pan, crack the eggs on the other side, and scramble until fully cooked. Mix everything back together.
  • Add the cooked rice to the wok, ensuring to break up any clumps. Stir it into the vegetables.
  • Pour in the soy sauce and sesame oil. Mix thoroughly and cook for an additional 2-3 minutes until everything is heated through.
  • Season with salt and pepper to taste.
  • Remove from heat and garnish with chopped green onions before serving.

Notes

For a vegetarian version, omit the eggs or substitute with tofu.
Feel free to customize the recipe by adding your favorite proteins, such as chicken, shrimp, or beef.
To enhance flavors, consider adding a pinch of chili flakes for a spicy kick.
