- 4 cups vegetable broth or water
- 1 cup diced carrots about 2 medium carrots
- 1 cup diced bell peppers any color
- 1 cup frozen peas
- 1 medium onion diced
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme

Rinse the rice under cold water until the water runs clear to remove excess starch.
