- 2 pieces limes (juiced)
- 4 tablespoons pomegranate juice
- 1 cup coconut milk
- 4 tablespoons sugar (or honey for a healthier option) Adjust for sweetness preference.

In a cocktail shaker, add the fresh mint leaves and lime juice. Use the muddler to gently press and release the oils from the mint leaves; do not shred them.
Add the pomegranate juice, coconut milk, and sugar to the shaker. Shake well until the sugar is dissolved and the mixture is well combined.
Fill serving glasses with ice cubes, then strain the mojito mixture over the ice, filling each glass about halfway.
Top off each glass with club soda and stir gently to combine.
Garnish with fresh mint sprigs and a lime wedge on the rim of each glass.
