  • 1 measuring cups
  • 1 jigger
  • 1 ice cubes
  • 4 serving glasses
  • 1 strainer (optional)

Ingredients
  

  • 10 leaves fresh mint
  • 2 pieces limes (juiced)
  • 4 tablespoons pomegranate juice
  • 1 cup coconut milk
  • 4 tablespoons sugar (or honey for a healthier option) Adjust for sweetness preference.
  • 1 ½ cups club soda
  • as needed cubes ice
  • as needed pieces fresh mint sprigs (for garnish)
  • as needed wedges lime (for garnish)

Instructions
 

  • In a cocktail shaker, add the fresh mint leaves and lime juice. Use the muddler to gently press and release the oils from the mint leaves; do not shred them.
  • Add the pomegranate juice, coconut milk, and sugar to the shaker. Shake well until the sugar is dissolved and the mixture is well combined.
  • Fill serving glasses with ice cubes, then strain the mojito mixture over the ice, filling each glass about halfway.
  • Top off each glass with club soda and stir gently to combine.
  • Garnish with fresh mint sprigs and a lime wedge on the rim of each glass.
  • Serve immediately and enjoy your Pink Coconut Mojito!
  • For a sweeter drink, you can adjust the amount of sugar or honey based on your preference.
  • For a non-alcoholic version, simply omit any spirits and enjoy as a refreshing mocktail.
