Ingredients
  

  • 4 medium potatoes About 2 pounds, washed and scrubbed, and cut into wedges or cubes.
  • 1 large onion About 1/2 pound, cut into thin slices or wedges.
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Optional.

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup, if desired.
  • Wash and scrub the potatoes, then peel them (if preferred). Cut the potatoes into even wedges or cubes, about 1-inch thick.
  • Cut the onion into thin slices or wedges, depending on your preference.
  • In a mixing bowl, combine the potato wedges, onion slices, olive oil, salt, black pepper, garlic powder, and paprika. Toss everything together until the potatoes and onions are evenly coated with the seasonings.
  • Spread the coated potatoes and onions in a single layer on the prepared baking sheet, making sure they are not overcrowded for optimal crispiness.
  • Bake in the preheated oven for about 25-35 minutes, stirring halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside.
