Ingredients
  

  • 12 oz smoked sausage, sliced
  • 8 oz pasta (e.g., penne or fusilli)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced any color
  • 1 can diced tomatoes, undrained 14.5 oz or 410 g
  • 3 cups chicken broth 720 ml
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 1 cup grated Parmesan cheese
  • for garnish fresh parsley, chopped

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the sliced smoked sausage and cook until browned, about 4-5 minutes.
  • Stir in the diced onion and bell pepper, cooking for an additional 3-4 minutes until softened.
  • Add the minced garlic and cook for 1 more minute until fragrant.
  • Pour in the diced tomatoes (with juices), chicken broth, pasta, Italian seasoning, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 10-12 minutes, or until the pasta is tender and the liquid has been mostly absorbed. Stir occasionally to prevent sticking.
  • Once cooked, remove the pot from heat. Stir in the grated Parmesan cheese until melted and well combined.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh parsley.

Notes

You can add your favorite vegetables such as spinach or mushrooms for extra nutrition.
Feel free to experiment with different pasta shapes as per your preference.
This dish can be a great leftover option, simply store in airtight containers in the refrigerator. Reheat on the stove or in the microwave before serving.
