Ingredients
  

  • 4 pieces salmon fillets 6 oz each
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup Kalamata olives pitted and sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 piece lemon Juice of 1 lemon
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, lemon juice, salt, and pepper. Whisk together to create a marinade.
  • Place the salmon fillets in a large baking dish or oven-safe skillet. Pour the marinade over the salmon, ensuring each fillet is coated evenly.
  • Scatter the halved cherry tomatoes and sliced Kalamata olives around the salmon in the baking dish.
  • Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
  • After 15 minutes, remove the foil and bake for an additional 5 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Remove from oven and let it rest for a few minutes. Garnish with fresh parsley if desired before serving.

Notes

Serve the Mediterranean salmon with a side of couscous, quinoa, or a fresh green salad for a complete meal.
Feel free to adjust the herbs and vegetables based on your preferences. Feta cheese crumbles can also be added for extra flavor.
This dish pairs well with a light white wine, such as Sauvignon Blanc or Pinot Grigio.
