- 4 pieces salmon fillets 6 oz each
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 cup cherry tomatoes halved
- 1 cup Kalamata olives pitted and sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 piece lemon Juice of 1 lemon

Preheat your oven to 400°F (200°C).
In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, lemon juice, salt, and pepper. Whisk together to create a marinade.
Place the salmon fillets in a large baking dish or oven-safe skillet. Pour the marinade over the salmon, ensuring each fillet is coated evenly.
Scatter the halved cherry tomatoes and sliced Kalamata olives around the salmon in the baking dish.
Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
After 15 minutes, remove the foil and bake for an additional 5 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from oven and let it rest for a few minutes. Garnish with fresh parsley if desired before serving.
