Ingredients
  

  • 8 oz pasta (penne or fettuccine)
  • 2 cups chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream Can substitute with lighter cream or half-and-half.
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach, chopped
  • 3/4 cup grated Parmesan cheese
  • 1 bunch fresh basil For garnish (optional).

Instructions
 

  • Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, garlic powder, onion powder, salt, and black pepper. Cook for about 5-7 minutes until the chicken is golden brown and cooked through.
  • Add the sun-dried tomatoes and spinach to the skillet. Stir for 2-3 minutes until the spinach is wilted.
  • Lower the heat and pour in the heavy cream and chicken broth. Stir well to combine.
  • Add the cooked pasta to the skillet and toss until the pasta is coated with the creamy sauce. Stir in the grated Parmesan cheese until melted and creamy.
  • Serve immediately, garnished with fresh basil if desired.

Notes

For added flavor, consider marinating the chicken in Italian seasoning for a few hours before cooking.
You can substitute heavy cream with a lighter cream or half-and-half for a healthier version.
This dish pairs wonderfully with garlic bread or a side salad.
