Preheat your oven to 400°F (200°C).
Peel the carrots and cut them into even-sized pieces, about 1-2 inches long, so they cook evenly.
In a mixing bowl, combine the honey, olive oil, melted butter, salt, and black pepper.
Add the cut carrots to the bowl and toss them until they are evenly coated with the honey mixture.
Line a baking sheet with parchment paper for easy cleanup (optional).
Spread the carrots out in a single layer on the prepared baking sheet.
Roast the carrots in the preheated oven for 25 minutes, stirring halfway through the cooking time for even roasting.
If using fresh thyme, sprinkle it over the carrots during the last 5 minutes of roasting.
Remove from the oven and let them cool for a couple of minutes before serving.
