Ingredients
  

  • 1 pound carrots About 4-5 medium carrots.
  • 2 tablespoons honey Adjust based on taste preference.
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter Melted.
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves Optional, sprinkle during last 5 minutes of roasting.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Peel the carrots and cut them into even-sized pieces, about 1-2 inches long, so they cook evenly.
  • In a mixing bowl, combine the honey, olive oil, melted butter, salt, and black pepper.
  • Add the cut carrots to the bowl and toss them until they are evenly coated with the honey mixture.
  • Line a baking sheet with parchment paper for easy cleanup (optional).
  • Spread the carrots out in a single layer on the prepared baking sheet.
  • Roast the carrots in the preheated oven for 25 minutes, stirring halfway through the cooking time for even roasting.
  • If using fresh thyme, sprinkle it over the carrots during the last 5 minutes of roasting.
  • Remove from the oven and let them cool for a couple of minutes before serving.

Notes

You can adjust the amount of honey based on your taste preference; if you prefer less sweetness, reduce the honey to 1 tablespoon.
For an extra burst of flavor, consider adding a splash of balsamic vinegar before roasting.
These honey roasted carrots pair well with roasted meats, grilled fish, or can be enjoyed on their own as a healthy snack.
