Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 bell pepper, diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 6 cups beef broth
  • 2 cups egg noodles
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt
  • to taste pepper
  • chopped fresh parsley for garnish Optional

Instructions
 

  • In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess fat if necessary.
  • Add the chopped onion and garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  • Stir in the diced carrots, celery, and bell pepper. Cook for an additional 5-7 minutes until the vegetables start to soften.
  • Add the can of diced tomatoes (with juice), beef broth, dried oregano, dried basil, salt, and pepper to the pot. Stir well to combine.
  • Bring the mixture to a boil, then reduce heat to low and let simmer for 10 minutes.
  • Add the egg noodles to the pot and cook according to package instructions, usually 6-8 minutes, until the noodles are tender.
  • Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley if desired.

Notes

This soup can be stored in the refrigerator for up to 3 days. It also freezes well; just be sure to cool it completely before transferring it to freezer-safe containers. Reheat on the stovetop or in the microwave when ready to enjoy again. Feel free to add any other favorite vegetables or spices to customize your soup!
