- 1 pound ground beef
- 1 medium onion, chopped (about 1 cup)
- 2 cloves garlic, minced
- 4 cups potatoes, diced (about 4 medium potatoes)
- 4 cups beef broth
- 1 cup milk
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1 cup shredded cheddar cheese (for topping)
- to taste fresh parsley, chopped (for garnish)
In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
Add chopped onion and minced garlic to the pot with the beef. Cook for about 3-4 minutes until the onion is translucent.
Stir in the diced potatoes, beef broth, salt, pepper, thyme, and Worcestershire sauce. Bring the mixture to a boil.
Once boiling, reduce the heat to low and cover the pot. Simmer for about 15 minutes, or until the potatoes are tender.
Stir in the milk and heavy cream. Allow the soup to heat through, but do not bring it back to a boil.
Taste and adjust seasoning if necessary.
Serve the soup hot, topped with shredded cheddar cheese and fresh parsley.
Feel free to add other vegetables such as carrots or peas for extra nutrition.
For a thicker soup, you can mash some of the potatoes in the pot before adding the milk and cream.
This soup can be stored in the refrigerator for up to 3 days or frozen for later use.
