Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 4 cups potatoes, diced (about 4 medium potatoes)
  • 4 cups beef broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded cheddar cheese (for topping)
  • to taste fresh parsley, chopped (for garnish)

Instructions
 

  • In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
  • Add chopped onion and minced garlic to the pot with the beef. Cook for about 3-4 minutes until the onion is translucent.
  • Stir in the diced potatoes, beef broth, salt, pepper, thyme, and Worcestershire sauce. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low and cover the pot. Simmer for about 15 minutes, or until the potatoes are tender.
  • Stir in the milk and heavy cream. Allow the soup to heat through, but do not bring it back to a boil.
  • Taste and adjust seasoning if necessary.
  • Serve the soup hot, topped with shredded cheddar cheese and fresh parsley.

Notes

Feel free to add other vegetables such as carrots or peas for extra nutrition.
For a thicker soup, you can mash some of the potatoes in the pot before adding the milk and cream.
This soup can be stored in the refrigerator for up to 3 days or frozen for later use.
