Ingredients
  

  • 12 oz pasta Fettuccine or penne.
  • 2 tablespoons olive oil
  • 4 cloves garlic Minced.
  • 1 cup heavy cream For a lighter version, substitute with half and half.
  • 1 cup grated Parmesan cheese Grated.
  • to taste salt
  • to taste black pepper
  • 1 tablespoon chopped fresh parsley For garnish.

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, drain the pasta in a colander, and set aside.
  • In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.
  • Pour in the heavy cream and bring to a simmer. Allow it to cook for about 2-3 minutes, stirring frequently.
  • Stir in the grated Parmesan cheese and mix until melted and smooth. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
  • Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Season with salt and black pepper to taste.
  • Serve immediately, garnishing each plate with chopped parsley.

Notes

Feel free to add cooked chicken, shrimp, or vegetables like spinach or mushrooms to elevate the dish.
For a lighter version, substitute half and half for heavy cream.
This recipe is easily adjustable for larger batches; just maintain the same ratios.
