- 12 oz pasta Fettuccine or penne.
- 2 tablespoons olive oil
- 4 cloves garlic Minced.
- 1 cup heavy cream For a lighter version, substitute with half and half.
- 1 cup grated Parmesan cheese Grated.
- to taste salt
- to taste black pepper
- 1 tablespoon chopped fresh parsley For garnish.
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, drain the pasta in a colander, and set aside.
In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.
Pour in the heavy cream and bring to a simmer. Allow it to cook for about 2-3 minutes, stirring frequently.
Stir in the grated Parmesan cheese and mix until melted and smooth. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Season with salt and black pepper to taste.
Serve immediately, garnishing each plate with chopped parsley.
Feel free to add cooked chicken, shrimp, or vegetables like spinach or mushrooms to elevate the dish.
For a lighter version, substitute half and half for heavy cream.
This recipe is easily adjustable for larger batches; just maintain the same ratios.
