- 4 pieces boneless, skinless chicken breasts About 1.5 lbs total.
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup fresh spinach Optional.
- 1 tablespoon chopped fresh parsley For garnish.
Season the chicken breasts with salt, black pepper, oregano, and basil on both sides.
Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side until golden brown and cooked through.
Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
Pour in the heavy cream and bring to a simmer, stirring frequently.
Add grated Parmesan cheese to the cream and whisk until melted and smooth. If using, stir in fresh spinach and cook for 2-3 minutes until wilted.
Return the cooked chicken breasts to the skillet, spoon the sauce over them, and let them simmer for an additional 2-3 minutes.
Remove from heat and garnish with chopped parsley. Serve warm.
For added flavor, you can marinate the chicken in Italian dressing for a few hours before cooking.
This dish goes well with pasta, rice, or crusty bread to soak up the delicious creamy sauce.
