- 12 ounces penne pasta
- 1 pound Cajun or Andouille sausage, sliced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 cup heavy cream For a lighter version, consider using half-and-half.
- 1 cup chicken broth Add more if the sauce is too thick.
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- to taste none salt and pepper
- 1 cup grated Parmesan cheese
- 2 green onions sliced (for garnish)
- optional none fresh parsley (for garnish)
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
Add the diced onion to the skillet and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
Pour in the heavy cream and chicken broth. Stir to combine, then add the Cajun seasoning and smoked paprika. Let the mixture simmer for about 5 minutes until slightly thickened.
Add the cooked pasta to the skillet and toss until well coated with the sauce. If the sauce is too thick, you can add a bit more chicken broth to reach your desired consistency.
Stir in the grated Parmesan cheese and mix until melted and creamy. Season with salt and pepper to taste.
Serve the pasta immediately, garnished with sliced green onions and fresh parsley, if desired.
You can adjust the level of spiciness by choosing different types of Cajun sausage.
For a lighter version, consider using turkey sausage and half-and-half instead of heavy cream.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave before serving.
