Ingredients
  

  • 12 ounces penne pasta
  • 1 pound Cajun or Andouille sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream For a lighter version, consider using half-and-half.
  • 1 cup chicken broth Add more if the sauce is too thick.
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • to taste none salt and pepper
  • 1 cup grated Parmesan cheese
  • 2 green onions sliced (for garnish)
  • optional none fresh parsley (for garnish)

Instructions
 

  • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  • Add the diced onion to the skillet and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Pour in the heavy cream and chicken broth. Stir to combine, then add the Cajun seasoning and smoked paprika. Let the mixture simmer for about 5 minutes until slightly thickened.
  • Add the cooked pasta to the skillet and toss until well coated with the sauce. If the sauce is too thick, you can add a bit more chicken broth to reach your desired consistency.
  • Stir in the grated Parmesan cheese and mix until melted and creamy. Season with salt and pepper to taste.
  • Serve the pasta immediately, garnished with sliced green onions and fresh parsley, if desired.

Notes

You can adjust the level of spiciness by choosing different types of Cajun sausage.
For a lighter version, consider using turkey sausage and half-and-half instead of heavy cream.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave before serving.
