- 3 cloves garlic, minced

Cook the fettuccine pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken and season with Cajun seasoning. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Pour in the heavy cream, bringing it to a gentle simmer. Stir in the grated Parmesan cheese and diced tomatoes, mixing until smooth. Season with salt and pepper to taste.
Return the cooked chicken to the skillet and mix well to combine with the sauce. Fold in the cooked fettuccine pasta, ensuring it's evenly coated with the creamy sauce.
Cook for another 2-3 minutes until heated through, stirring gently.
Serve the pasta immediately, garnished with chopped fresh parsley.
You can adjust the level of spiciness by adding more or less Cajun seasoning according to your taste.
Feel free to add vegetables like bell peppers or spinach for extra nutrition and flavor.
