Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon butter or olive oil
  • zest of 1 lime
  • 2 tablespoons lime juice About 30ml.
  • ½ cup fresh cilantro, chopped Approximately 30g.
  • ½ teaspoon salt Approximately 3g.

Instructions
 

  • Rinse the rice under cold water until the water runs clear to remove excess starch.
  • In the rice cooker, combine the rinsed rice, water, and salt. Add the butter or olive oil to enhance flavor.
  • Close the rice cooker lid and set it to cook according to the manufacturer's instructions.
  • Once the rice is cooked, let it sit for about 5 minutes, allowing the steam to finish cooking the rice.
  • Carefully fluff the rice with a fork.
  • Add the lime zest, lime juice, and chopped cilantro to the rice. Gently mix until evenly incorporated.
  • Taste and adjust seasoning if necessary. Serve warm as a side dish.

Notes

For extra flavor, consider adding diced jalapeños or garlic while cooking the rice.
This dish can be made ahead of time and reheats well in the microwave.
