Ingredients
  

  • 1/4 cup olive oil
  • 3 tablespoons lemon juice freshly squeezed
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme chopped (or 1 teaspoon dried thyme)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pieces boneless, skinless chicken breasts about 1.5 pounds

Instructions
 

  • In a mixing bowl, combine the olive oil, lemon juice, honey, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Whisk until thoroughly mixed to create the marinade.
  • Place the chicken breasts in a plastic zip-top bag or a shallow dish.
  • Pour the marinade over the chicken, ensuring that each piece is well coated.
  • Seal the bag or cover the dish and refrigerate for at least 1 hour (up to 24 hours for more flavor).
  • Preheat your grill or oven to medium heat (about 375°F/190°C).
  • Remove the chicken from the marinade, shaking off any excess.
  • Grill or bake the chicken for 6-7 minutes per side (or until the internal temperature reaches 165°F/75°C).
  • Remove the chicken from the heat and let it rest for 5 minutes before slicing.
  • Serve with your favorite sides and enjoy!

Notes

This marinade works well with chicken thighs and drums if you prefer darker meat.
For extra flavor, consider adding a pinch of red pepper flakes for some heat.
You can use the leftover marinade (if boiled) as a sauce for serving, but ensure it's cooked thoroughly to kill any bacteria.
