Ingredients
  

  • 8 oz rice noodles
  • 1 tablespoon vegetable oil
  • 1 unit bell pepper, thinly sliced (any color)
  • 1 cup snap peas, trimmed
  • 2 units carrots, julienned
  • 3 units green onions, sliced For garnish.
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon chili paste Adjust to taste.
  • 1 unit fresh cilantro for garnish (optional)
  • 1 unit crushed peanuts for garnish (optional)

Instructions
 

  • Begin by cooking the rice noodles according to package instructions. Drain them in a colander and rinse under cold water to stop the cooking process. Set aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Toss in the sliced bell pepper, snap peas, and julienned carrots. Stir-fry for 3-4 minutes until the vegetables start to soften but remain crisp.
  • Stir in the cooked rice noodles and gently toss to combine with the vegetables.
  • In a small bowl, mix the soy sauce, fish sauce, brown sugar, lime juice, and chili paste. Pour this sauce over the noodles and vegetables in the skillet, stirring to ensure everything is well-coated.
  • Cook for an additional 2-3 minutes to heat through, allowing the flavors to meld.
  • Remove from heat, and garnish with sliced green onions, fresh cilantro, and crushed peanuts if desired.
  • Serve warm and enjoy your Savory Thai Noodles!

Notes

Feel free to customize this dish by adding protein such as shrimp, chicken, or tofu for a heartier meal.
