Ingredients
  

  • 1 pound ground beef
  • 1 cup white rice
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup diced tomatoes optional
  • ½ cup chopped bell pepper optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • Add the onion powder, garlic powder, salt, and black pepper to the beef. Stir well to combine.
  • Add the cream of mushroom soup, beef broth, and rice to the skillet. If using, mix in the diced tomatoes and chopped bell pepper.
  • Stir all ingredients together until well combined and bring to a gentle simmer. Let it cook for about 5 minutes.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Cover the dish with aluminum foil (if available) and bake for 20 minutes.
  • Remove the foil, sprinkle the shredded cheddar cheese evenly on top, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Allow the casserole to cool for a few minutes before serving.

Notes

You can customize this casserole with different vegetables, such as corn or peas, to suit your taste.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
For a spicier version, add chopped jalapeños or a dash of hot sauce.
