Ingredients
  

  • 2 cups granulated sugar
  • 1/2 cup unsalted butter 1 stick
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 cup toasted pecans, chopped For a richer flavor, toast the pecans in a dry skillet over medium heat until fragrant.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

  • Prepare your baking dish by lining it with parchment paper or greasing it lightly.
  • In a medium saucepan, combine the granulated sugar, unsalted butter, and heavy cream. Stir over medium heat until the mixture comes to a boil.
  • Once boiling, reduce the heat to low and continue to stir for about 5-7 minutes, or until the mixture reaches a soft-ball stage (around 234°F on a candy thermometer).
  • Remove the saucepan from heat and stir in the chocolate chips, chopped toasted pecans, vanilla extract, and salt. Mix until everything is well combined, and the chocolate is fully melted.
  • Pour the fudge mixture into the prepared baking dish and spread it out evenly with a spatula.
  • Allow the fudge to cool at room temperature for about 2 hours, or until completely set. For quicker results, you can refrigerate it for about 1 hour.
  • Once set, cut the fudge into 16 equal pieces and serve. Store any leftovers in an airtight container in the refrigerator.

Notes

For a richer flavor, you can toast the pecans in a dry skillet over medium heat for a few minutes until fragrant before adding them to the fudge.
If you prefer a creamier fudge, you can add a touch more cream.
