Ingredients
  

  • 4 large bell peppers any color
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo wing sauce
  • 1/2 cup cream cheese softened
  • 1 cup shredded cheddar cheese divided
  • 1/4 cup green onions chopped
  • to taste salt
  • to taste pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
  • In a mixing bowl, combine the shredded chicken, buffalo wing sauce, cream cheese, half of the cheddar cheese, and green onions. Mix well until all ingredients are evenly blended. Season with salt and pepper to taste.
  • Spoon the buffalo chicken mixture into each of the bell peppers, filling them generously.
  • Top each stuffed pepper with the remaining shredded cheddar cheese.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Once done, remove from the oven and let cool for a few minutes before serving.

Notes

For extra heat, add more buffalo wing sauce to the filling or top with additional hot sauce before serving.
You can customize the recipe by adding vegetables or beans to the filling for added nutrition.
Refrigerate any leftovers and reheat in the microwave or oven.
