Ingredients
  

  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets, fresh or frozen
  • 1 cup white rice, uncooked
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ½ cup breadcrumbs (optional for topping)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring 4 cups of chicken broth to a boil. Add the uncooked rice and reduce the heat to low, covering the pot and letting it simmer for about 20 minutes until the rice is cooked and the liquid is absorbed.
  • While the rice is cooking, heat olive oil in a skillet over medium heat. Add the broccoli and sauté for about 5-7 minutes until tender.
  • In a large mixing bowl, combine the cooked chicken, sautéed broccoli, cooked rice, cream of chicken soup, 1 ½ cups of shredded cheddar cheese, garlic powder, onion powder, salt, black pepper, and paprika. Mix well to combine.
  • Pour the mixture into a greased 9x13 inch casserole dish. Spread it evenly with a wooden spoon.
  • Top with the remaining ½ cup of shredded cheddar cheese and breadcrumbs (if using) for an added crunch.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Feel free to customize the casserole by adding other vegetables like carrots or bell peppers.
This dish can be made ahead of time and stored in the refrigerator before baking. Just adjust the baking time to ensure it's heated through.
For a lighter version, you can substitute the cream of chicken soup with a homemade white sauce or a low-fat alternative.
