Ingredients
  

  • 12 oz whole wheat pasta (e.g., penne or fusilli)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 bell pepper (any color) bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper Adjust to taste.

  • 1 cup frozen corn
  • 1 cup black beans Drained and rinsed.
  • to taste fresh parsley or green onions for garnish Optional.

Instructions
 

  • Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5-7 minutes until softened.
  • Add the minced garlic, Cajun seasoning, smoked paprika, and cayenne pepper to the skillet. Stir for 1 minute until the spices are fragrant.
  • Pour in the diced tomatoes (with juices) and vegetable broth. Stir well to combine and bring to a simmer.
  • Add the frozen corn and black beans to the skillet, and cook for an additional 5 minutes until heated through.
  • Mix in the cooked pasta, and toss everything together until well combined. Season with salt and pepper to taste.
  • Serve hot, garnished with chopped parsley or green onions if desired.

Notes

Feel free to customize this dish by adding other vegetables like zucchini or spinach.
For an extra kick, you can add more cayenne or hot sauce when serving.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or microwave before serving.
