Ingredients
  

  • 3 large bell peppers, chopped Any color.
  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, drained
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt To taste.
  • Pepper To taste.
  • 1 tablespoon olive oil
  • Fresh parsley for garnish Optional.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they are soft and fragrant, about 3-4 minutes.
  • Add the ground beef (or turkey) to the skillet, cooking until browned. Drain excess fat if necessary.
  • Stir in the chopped bell peppers, diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Cook for an additional 5-7 minutes until the peppers are slightly tender.
  • Transfer the mixture to a large baking dish, spreading it evenly.
  • Sprinkle the shredded cheddar cheese on top of the casserole.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

You can customize this casserole by adding other vegetables such as zucchini or corn.
For a vegetarian version, replace the meat with black beans or additional vegetables, and use vegan cheese if desired.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
