- 4 medium apples Such as Honeycrisp or Granny Smith.
- 1 cup feta cheese, crumbled
- ½ cup dried cranberries
- ¼ cup honey
- 1 teaspoon ground cinnamon
- ¼ cup walnuts, chopped Optional.
Preheat your oven to 350°F (175°C).
Wash and core the apples, removing the seeds. If you don’t have an apple corer, use a paring knife to carefully cut out the core from the top of each apple.
In a mixing bowl, combine the crumbled feta cheese, dried cranberries, ground cinnamon, and chopped walnuts (if using). Mix well until all ingredients are evenly combined.
Stuff each apple with the feta and cranberry mixture, packing it in slightly to fit all the filling.
Place the stuffed apples in a baking dish. Drizzle honey over the tops of the apples, allowing some to enter the stuffing as well.
Cover the dish with aluminum foil (optional) and bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 5 minutes, until the apples are tender and the top is lightly golden.
Once cooked, remove from the oven and let cool slightly before serving.
Feel free to substitute the cranberries with other dried fruits such as raisins or chopped apricots.
For added flavor, you can sprinkle some nutmeg or ginger along with the cinnamon.
Serve warm, optionally with a scoop of vanilla ice cream for an extra treat.
